Winter Warmer

I am looking to brew a winter warmer this year but I don't have a big enough to pot to do an all grain BIAB. I was wondering if anyone would be able to help me out with a nice winter warmer extract/specialty grain recipe that would yield 5-6 gallons. Please forgive me if I've posted this in the wrong forum.

2.0kg Light LME
1.5kg Light LME marris otter
1.71 kg torrified wheat
0.92 kg cara/crystal malt
0.69 kg chocolate malt
0.23 kg roasted barley
0.25 kg brown sugar, dark
134g Willamette - Boil 60 mins
71g Tettnang - Boil 15 mins
70g Cascade - Boil 0 mins

Won't make a difference for this beer, but I would dump LME for DME, as LME will darken the beer over the course of the boil. This beer is already dark, so not that big of a deal, but a lighter beer it would be more noticeable.

Or you just add the LME late in the boil.

Curious where you got the Maris Otter LME however.

Just trying to convert the above posted recipe from ag to extract and marris otter lme was in brewer's friend so I figured if it's a thing and in the original recipe it should be in the extract version.

Another option to maximize your yield with all grain is to mash thicker than normal (still not as thick as regular all grain) and then add water to bring you up to the desired volume. I mentioned this replying to your post on efficiency. If you're using Beersmith I can help you figure this out, and if you aren't, then I can help you with the math.

Yeah I was wondering if I can do an ag biab and then top up to five gallons. I just don't have a kettle big enough to boil five gallons of wort and my stove has trouble getting four gallons to a boil.

Ok so here's where I've landed for a partial mash recipe for a winter warmer:

6lbs. 2-row
1lbs. Crystal 120L
1lbs. Victory
1lbs. Chocolate
4lbs. DME - light (at the end of the boil)
1oz. Northern Brewer (60 minutes)
2 Cinnamon sticks
1tsp. All-spice
1tsp. Nutmeg

OG: 1.073 FG: 1.017 AbV: 7.39% SRM: 34 IBU: 26

What do you guys think? Thanks.

I'm really not an expert on the style. But it sounds like a little vanilla would work well with this. You could also sub out some dme for D90, to get some stone fruit and raisin character.

How much D90 do you think would be appropriate? I've never used it before.

Does DME have less of an extract flavour than LME? I've transitioned to all grain brews and I really don't want to have that extract "twang" I just can't boil 7.5 gallons of liquid on my stove.

DME is supposed to be a little better quality. As far as the twang goes that's hard to say. I think the twang comes more from poor brewing practices rather than an extract. There are some people out there making amazing beers with DME, recently a friend gave me a bottle of his NEIPA made with extract and I was blown away at how good it was.

I do find bigger, maltier, etc beers hide the extract a little better. So this recipe sounds like it should do the trick.
