Started off as a smash, and when I realised I didn't actually have any Belma, I changed the hop bill to a more complex one.

14lbs Maris Otter

2oz Centennial @ 60
1oz Cascade @ 30
1oz Amarillo @ 30
1oz Cascade @ 15
1oz Amarillo @ 15

Dry-hop 1oz each Centennial/Cascade/Amarillo.

US-05.

Mash 4 gallons @ 152, Sparge 4.5 gallons @ 168. 2Tbsp Gypsum post-mash.

No, it's not an APA. Just something I'll enjoy drinking.

How do you find Maris with a hoppy style like this?

Clashes a little to start with, but mellows out once the beer drops a little clearer. The Cascade/Melanoidin combo is one I'm pretty used to in a lot of IPAs.

What about head retention?

The volume of hops in this should help a little, and there should still be enough proteins in the wort to support a decent head.
