Title: Yeast recommendation
Post by: robcoombs on September 03, 2014, 04:18:50 PM
I am finishing up a recipe for a stout and I was hoping to get some recommendations for a yeast to use. I've only brewed a stout once before, I used US-05 because I wanted something that was going to finish clean at the time. But this time around I want a strain that's going to add flavor and complexity. I'm hoping the beer itself will have some coffee and chocolate flavors and will be very roasty.

I'd love to hear from you @jamie_savoie (http://nbcba.org/forum/index.php?action=profile;u=1182) on this one.

Hey @robcoombs (http://nbcba.org/forum/index.php?action=profile;u=2012) , I dont have a ton of experience with different yeast, but for a nice stout.. especially if you're looking for the roast and coffee to shine... SO5 is perfectly fine. Some english strains would be good for some complexity, ringwood maybe. british ale yeast is a safe option too in my opinion. One of my favorites is definitely irish ale yeast.

To be honest I really like 04 for a stout. It adds complexity but of course different than a liquid yeast. Ive tried my stout with a variety of liquid yeasts and i always seem to prefer the 04. Go figure. Its always nice to try the liquid varieties - they tend to have a cleaner more profound profile but in the end its just personal preference i guess...

I agree with brew on this one, 04 is really great in a stout.  I prefer 05 or any clean yeast for American stout or robust porter.  If you would like to try a liquid, WY1084 would be very good, whitebread too.  I think WY1450 would be my choice, it’s relatively clean yeast with good malt/hop balance and great mouthfeel.

Thanks @DandyMason (http://nbcba.org/forum/index.php?action=profile;u=486) , @brew (http://nbcba.org/forum/index.php?action=profile;u=137) , and @jamie_savoie (http://nbcba.org/forum/index.php?action=profile;u=1182) ! I may try the 04 since I haven't tried it in a stout before. Though I do already have some 05 at the house. Thanks for the feedback

S-04 and Nottingham are both good options
