Title: Lager Yeast
Post by: Jake on November 06, 2011, 11:04:51 AM
Has anyone here had any experience with the S23 yeast? Thinking about doing a dark lager ... does the yeast need to be treated any different than the S04 or 5? I know to ferment at lower temp, but other than that, the exact same?

Ferment at around 12C (it can take down to 9, but you need to pitch more then). Brew until gravity is final, then lager for a while.

I'm actually planning to do a steam beer with S-23, after trying Dean's second Pilsner - brewed in the warmer months. It's got a nice fruity character similar to Anchor Steam, should go well with a boatload of Amarillo.
