Title: Beer and Cheese Dip
Post by: Two Wheeler on November 08, 2014, 11:23:49 PM
After many positive reviews after the Nov 8 meeting at my place, I figured this would dip would qualify for the "Tried and True" section. I totally have to credit my better half for finding this on pinterest or something.

2 cups shredded sharp cheddar
1 cup shredded mozzarella
8 oz (one brick) cream cheese
1/2 cup light-medium beer**
2 tsp chilli powder
1 tsp cayenne pepper
1 tsp garlic powder
1/4 tsp pepper
1/4 tsp salt
1 cup green onion (garnish)

All you have to do is melt it all together in a pot, about medium heat. I served it in a Pumpernickel bread bowl. It was really quite spicy, so cutting down on the cayenne could help that.

**I used about a full cup of my IPA instead of 1/2 cup of "light-medium beer"

I think a stout would go really well in this, thanks for posting.
