I've been thinking of brewing a darker beer, might toss this into the mix along with your recommended changes. Did you plan on upping the base grain or some of the other grains to up the %?

I would just increase the base grain. The roasted percentages were high enough in my opinion.

I enjoyed this beer the other day, but can see how it would be too much coffee when it was newly brewed, and for most people who like a normal amount of coffee flavour.

I wondered the same so I contacted Shane Steeves about his watermelon wheat, which I think has a good amount of watermelon character. I added the same amount he uses. Concentrating it would be an option I think. In the end it may just come down to how much flavour is in the watermelon to begin with.
