Brettanomyces

Has anyone brewed with Brettanomyces yeast, and if so, can you share your experience? I'm curious and would like to give it a try. Thomas, would the yeast library have any slants?

I know the yeast library doesn't have any yet. I think Shawn did / is doing a Flanders Red, which I believe incorporates it.

I suggest you go to the liquor store and buy a bottle of Orval. It has a strong brett character. I personally find it awful, but its personal taste, and many people really like it.

I do really enjoy Orval. As a matter of fact I have some some DME starter in an Orval bottle as we speak. Not much happening with it though.

I do believe that Orval is one of the only trappist brewerys that do not use the same yeast for bottle fermentation as they do for primary so what you culture may not give you what your looking for

The brett is definitely in the bottle... you get some serious funk if you leave them to mature for a while.

Hmmm, there's an idea... I've never added yeast to bottle prime before, maybe I will use this to bottle prime some of a future batch. I have heard that some breweries do use different yeast for that. Interesting. Experimenting is good  :wavebeer:
