Dave: I made a similar er... "mistake". Rather I left the thing outside in a ferment bucket to cool and it took so damn long that I just left it from 11pm -> 4am (I have a weird sleeping pattern). Was real cold but not frozen... still lagging atm, but I suspect the cold will inhibit things for a day or so.

Also, measured OG was 1.065, which is much higher than the predicted 1.056 'cause I undershot my end volume by about a gallon. Oops.

Ah well, practice makes perfect. Still smells awesome + looks like it should, so we shall see...

So how did your first AG go?

I remember my first. Actually there are quite a few I remember in the last
5 years I have been doing them.

tbh I'd been thinking about the process so long that it almost felt like I'd done it before. Helped a lot that I'd done a few half-mashes. The real confidence came when I saw others (Dave live + youtube) doing theirs and realising it was just a matter of more steps. Result is currently bubbling away in primary and smelled like what I knew from partial mash + extract.

Fingers crossed + thanks to Dave, Kyle, Shawn, and Hawoh for their superbly succinct and relevant advice.
