I second the hoppy saison. What hops do you have right now. I could help with a recipe if you're unfamiliar with the style.

i have 1 lb polaris 1 - 2 lb willamette   4 oz of cascade and a few oz of goilding. but i would but different ones if needed. my problem is i brew mostly american style ales and i dont know where to go with it

Roger

I've never used this yeast but I'd say saison of some kind. Hoppy saisons are always tasty. Make sure that you use equipment that you dont mind dedicating to sours though. As you likely know this strain contains Brett so it could infect anything made of plastic.

Where do you buy your hops?

Here's what I would do with that yeast.

80% Pils (2-row is fine if you don't have pils)
10% wheat malt
7% flaked oats
3% acid malt

Mash @149

OG ~1.055  IBU~35

I wouldn't add any hops until 10mins
Hops @10 to get half your ibus (about 1.5-2 oz)
Hops @ flame out for a 15 min steep for the other half of the ibus (about 1.5-2oz)
Hops when you start chilling and temp just drops below 180F (about 1.5-2oz)
Dry hop 2oz when primary fermentation starts to wind down (day 4-5)
Dry hop 2-3 oz for one week prior to bottle/kegging

Like I said the cascade would work, but I would pair it with another variety or two. From what I see in stock at the places you buy from I would recommend citra, galaxy, amarillo as options to pair with a saison/brett strain combo.

Another way to go at this would be to use polaris @60 to get half your ibus, use the 10 min addition and steep to get the rest. That would save you using some hops, though obviously it won''t be as punchy. Hope this isn't too confusing.

Also, yes that is a fair amount of hops for a single batch. What can I say, I love hop forward styles to slap you in the face
