Grizzaca Clone - Meek Brewing blog

I've been looking to do a Grizzaca clone ever since I tried it on my maine trip last year. I found this recipe on the Meek Brewing Co. Blog:

Recipe targets: (4 gallons, 75% efficiency) OG 1.041, FG ~1.005, IBU ~40, SRM 3, ABV ~4.6%

Grains:
1.3 kg (49.1%) Pilsner
650 g (24.5%) Wheat malt
650 g (24.5%) Flaked Wheat
50 g (1.9%) Acid malt
125 g Rice hulls


Hops:
Azacca - 5 g (14% AA) @ 60 min
Azacca - 30 g @ 5 min

Azacca - 30 g @ 0 min (with a 15-minute steep)

Azacca - 60 g after started chilling, when wort temp below 180 F

Azacca - 40 g dry-hop for 4 days (in primary)
Simcoe - 20 g dry-hop for 4 days (in primary)

Azacca - 40 g dry-hop for 4 more days (keg-hop)
Simcoe - 20 g dry-hop for 4 more days (keg-hop)

Misc.: 1/2 tab Irish Moss @ 5 min

Yeast: Wyeast 3711 French Saison (production date Aug 19th)

Water: Fredericton city water, carbon-filtered; 2 g Gypsum and 2 g calcium chloride added to the mash

I really wanted to do spelt flakes instead of the wheat because I remember talking to one of the brewers at oxbow about spelt in the Grizzaca. So I went to bulk barn to buy spelt flakes; not wanting to risk cross contamination I ordered a full, new bag instead of scooping from the bin. So...the bag is much bigger than I anticipated!. I plan on doing this recipe many times but not that much! If anyone is interested in spelt flakes for this or any other recipes, please come get some from me! Haha, I'll give you a good price!

Just waiting for my French saison yeast to come in now and I'll get this brew started!

Also I need an Azzaca hop substitute... Any suggestions? I was thinking citra.

I've brewed this as well. It's a solid recipe and the original from Oxbow is awesome. If you want some French saison slurry I'll trade you for the spelt. The last time I ordered that strain from noble grape it took two months to come in.

I have this next on my list to brew actually so we should do a side by side comparison.

As far as substitutes for azacca go, citra is good but I think you'll want to split that with something else. Azacca is fairly tropical and citra can be more dank than that variety. Not to say all citra wouldn't be good, but if you want something closer to the original I'd go half and half with another hop. Maybe Vic secret or kohatu, comet can have some pineapple character that would work well. Nelson is always a great choice.

Azacca is a unique hop. Worth paying for it if you get the chance. Good luck with the recipe!

Sounds great @robcoombs I would definitely take you up on that offer. We need to meet up sometime soon since I can't make it to the next meeting!

As for the azzaca substitute I was hoping to use up some of the hops I already have, which include: citra, mosaic, simcoe, orbit, cascade, centennial columbus and goldings.

I haven't used orbit before, mainly because it changes annually and is a blend of NZ hops. If it has tropical or citrus scharacter I would definitely use it. I would still use the citra as you had planned. The centennial or cascade would be fine as well. I love simcoe and mosaic but again, combined with citra they can get a little dank. Which is fine but not exactly the character of the original Grizacca.

Thanks for all the advice rob. I'll probably end up deciding on brew day but it will be a mix of citra, cascade and/or centennial. Gotta use up my old hops first, but I'll definitely be looking to buy some azzaca hops this summer.

Good thing it's IPA season, time to use up my old hop surplus!

Anytime. I wish I could narrow IPA brewing to a season. It would save me so much money in hops. For me it's always IPA season.
