Still trying to find that elusive "House IPA," but this should be close:

24# 2-row
5# Vienna
1# Melanoidin Malt

Mash temp 151 F
Fredericton water + 2Tbsp gypsum in mash water
Boil 13.5 US gallons
12 gallons into fermenter

Pellet hops:
3.75oz Chinook (12.8%) @75min
2oz Cascade (7.4%) @17min
2oz Amarillo® (8.9%) @17min
1oz Cascade @ flameout
1.25oz Chinook into fermenter
1.25oz Cascade into fermenter
1.25oz Amarillo into fermenter
2oz Centennial into fermenter

Spunding valve
2 packs US-05 yeast
