I want to try Kyles Tried and Tested Stout recipe but cannot find Challanger hops through Noble Grape or OBK.  There are some subsitutues out there but the AA values are wrong.  kyles recipe calles for 2 oz Challanger (5.5 aa) but all the subs I see are in the 10-11 aa range.  I am at work now so cannot run Beersmith to adjust for the final bitterness of any subs.  I would love to use challanger to keep the recipe as tested.  I am do a 13 gallon BIAB batch so would need 4.5 oz if anyone have any for sale.  Thanks

Stout isn't really about the hops.  If you're making a single addition at 60 minutes, then EKG or Fuggles would do just fine.  You probably wouldn't even notice the difference.

Good to know Chris.  I was thing of using fuggles since it seems to be a popular bittering hops in stouts.

Sweet.  I will take 5 oz of Challanger Brew.  I can grab it when I come get the grain and yeast.  Thanks everyone.

Yeah, Challenger is best for the recipe, as it gives a slight earthy / peppery character. However, I've made it with fuggles to bitter (just adjust the volume to match the alpha acid level), ind its pretty close. Glad you are giving the recipe a try. I drew my inspiration for it from the Garrison Martello stout, the St Ambroise Oatmeal Stout, and a porter that Dave made a few years ago... its tasty.

Unless you pitch infected yeast, it's pretty hard to make this recipe taste bad.  I've made it on several occasions, with a few modifications each time, and it's just plain old delicious!
