Is it just me and my inexperienced palate, or does Dieu du Ciel make some of the most incredible IPAs ever? I've had 3 so far, and all of them have completely blown my mind! A beautiful blend of American and Belgian styles, offering a wonderfully complex and well balanced ale.
Working my way through a bottle of Chaman, it has been exceptional in every respect.

Anyone have any thoughts on their brews?

ddc makes world class beer and one of the best microbrewery of quebec....even canada imo.  Them and trou du diable are my 2 fav.   I really want to try their latest Solstice d'été.
I never had chaman but I had corne du diable and it was terrific.
Last night I tasted my houblonmonstre (ipa/tripel hybrid) for the first time and was really impressed with it.  Even young it tasted fabulous.  Not super bitter up front but lots of hops flavour/aroma with nice touch of pepper from the yeast

The Chaman tasted like a really bitter candied orange peel with a splash of honey and grapefruit, all balances by a super malty body with traces of toffee. As good as it was I find the Herbes a Détourne much better. I was actually looking at a list of the world's best beers and their Péché Mortel rates in the top 20... not surprising!
Actually.... come to think of it, Richard accidentally froze that bottle of Chaman last time I was at his place. Second time he and I put one in the freezer and forgot about it hah didn't seem to affect it though.
