Irish red, based on waving my hands until a recipe came out.

9lbs Maris Otter
2lbs Toasted Flaked Barley
1lb Brewer's Flaked Corn
1lb Caramel 240EBC
1oz Roast Barley.

2oz EKG 5% @ 60.

Whitbread 1099.

Mash 4 gallons @ 154, Sparge 4 gallons @ 168.

I'm doing an Irish Red on Sunday with Irish Ale yeast that I got today.

Irish ale yeast around my place is touchy subject. My sisters BF swears that he's allergic to it, since he had an allergy/pukefest the one night I had him over to drink it. He loved it, he's just frightened to death of the yeast (for no reason in my mind, but whatever lets him sleep better :P )

This one came out pretty damn perfect.. right color, right flavours, and perfectly dry for the style. I should disclose that I didn't make a starter and pitched a pack of S-04 on the second day because fermentation didn't appear as rigorous as I'd like. This should therefore be considered with caution until re-run with better quality control on the recipe. However this doesn't have any of the markers I'd normally associate with S-04, so I suspect the Whitbread got a strong hold first.

If someone has washed/whatever Irish Ale yeast I'd like to re-run this one with that.

I have one jar of 1084 to give to Thomas at the next meeting.  Maybe I'll pop by and deliver it some time this week.  Will PM.

My Irish Red is nice.  Not dry.  Very malty.  Great flavour.  It was well received on Saturday.

This one's malty, but fairly dry... the two are very much not mutually-exclusive. I'm not generally a fan of sweeter beers (DFH120 is an exception, mind), so you could perhaps consider this tuned to my tastes.

That said, I suspect I missed my mash temperature by a couple of degrees down... will re-run with better attention on that front - and the Irish Ale yeast, when I've got hold of it.

If you want to drop the irish ale washed to me I can pass along a sample to Thomas (use the jar, give him the empty w/residue to streak). Up to you.

I did a pretty crappy job of "washing" the yeast this time.  There isn't much yeast, and there's  lot of trub left.  I had no intentions of reusing it.  I'll get it to Thomas.  He lives next to where I work.
