Pißwaßer Cream Ale MK-II

Yeah I know I'm a stuck record again; trying to tweak around with a cream ale recipe until I get something both the FIL and myself can chug in the summer months. I figure the Pißwaßer is good, but the cascade hops aren't apparent enough in the flavour for my liking. Decided to revert back to noble hops, be a little more heavy handed with the additions, and jack back the rice a little bit (it gives a nice dry bite, but in excess it's... weird). I'm ditching the Pilsner in favour of Canadian 2-row for supply reasons.

9lbs Canadian 2-row.
1.5lbs Flaked Brewer's Corn.
0.75lbs Toasted Flaked Rice.

0.3oz GR Magnum 10% @ 90.
0.5oz Saaz 4% @ 20.
0.5oz Saaz 4% @ 0.

S-05.

Mash 3 gallons/20 mins @ 144, add 1.25 gallons boiling water and rest another hour. Sparge 4 gallons @ 168.

Gelatin finings before kegging.

Don't want to get too "crafty" with this; the whole point is to appeal to a palate that finds Amber Ale too cloying.

I made a light ale for a bmc drinking friend using saaz and I think it'll be very good.  It's not carbed up enough yet but the tiny sample I tasted had the spicy bitterness like a lager.  If it does turn out good I'll post the recipe.

Yup he really like it. I went and tried a couple pints and it was better than I expected.  He also had a keg of Simeon jones him and his buddy's liked mine over pics.  I'll post the Recipe tomorrow.  2 row, light Caramel saaz hops.  I put 2 gals of RO water in the strike water.

This turned out to be a real nice one. FIL is very happy with it - will likely make it for him regularly.

Hey Richard - so why the 3 gallon mash @144? for only 20 minutes? That would make it super dry right? Then the boiling water brings it up to like 150 or so?

You answered your own question - yeah, I'm doing a beta-rest then a combined alpha/beta. Trying to get the most out of the enzymes to try the beer out as much as possible. Seems to work, but I'm pondering adding sucrose in place of some of the base malt to dry it out even more.
