Tangerine Hefeweisen

7# Malted Wheat
4# Bohemian Pils Malt

Mash 1 hour at 153F
Sparge 15 minutes at 167F

0.65oz Cascade pellets (4.6a/a) at 45min
0.25oz Saaz pellets (5.8a/a) at 15 min
Whirlfloc at 15 min (will still  be cloudy, if you skip this it will be opaque)
zest (no pith) of 1 tangerine at 1 min
0.25oz Saaz at 1 min

WB-06 yeast

Kyle: 7.5gal total mash, 7gal into boil, 6gal into fermenter -- sound right? What numbers (OG/FG) did you get on this one?

I'd say about 3.5 gallons into the mash.
then 3.25 gallons of sparge water.
given the boil-off evaporation and the trub loss, this amount works well to get 5.5 gal in the fermenter, and then there is another 1/2 gal loss of the bottom ickies, which creates the perfect amount to fill a keg.

I measure all this in US gallons.

I didn't bother to measure the gravities.

just a thought maybe the cascade would be better as late additions to lend to the citris flavor your going for

Just a double-check, is this a 45min boil? Intuition suggests you'd want more for the Pilsner/DMS situation?

With the pilsener malt in there, I'd do a 90-minute boil, to make sure you get rid of the DMS.

I extended the boil to about 75 minutes (an extra 30 mins before adding the first hops)... that Pilsner sures smells grassy when you mash it (kinda worried me enough to do the above on my own intuition). Hopefully that'll be enough.

75 minutes wil be fine... good call.

I've made the recipe twice with a 45 minute boil only and no perceptable DMS... but you will be safer with the longer boil.

Just kegged this today after about 5 weeks in primary. The sample I took was really good, 1 tangerine is definately enough to give it a good flavour without being overpowering.

The hops came through as expected, with the Cascade citrusiness playing well with the tangerine. The Saaz have given it a very pleasant floral aroma that goes well with the WB-06 esters.
