(C = cup, t = teaspoon, T = tablespoon)
Sautee:
3 cloves garlic, minced
1 medium sized white onion, finely chopped
2 T butter
1 t olive oil
Then add:
about 2 pounds haddock
1 T lemon juice
1/4 C orange juice
zest of 1 orange
12oz Coriander wheat beer
28oz can of diced tomatoes
3 bay leaves
1/2 t Dill (dry)
1/2 t Cayenne pepper (dry)
1/2 t sea salt
1/2 t pepper
3 pints of water
Once fish is fully thawed, bring gently to a boil, then simmer for a few hours.
