I am looking to get a proper stainless kettle, preferably start with 8gal so I can use it for 5gal batches. Figured I'd check here to see if anyone had one they are holding on to, before I pick a new one up.

I wound suggest getting a 15 gal or so as I started with an 8 and wish from day 1 I went bigger. If it's in the budget bigger is my suggestion. Doing a double batch is nice

I bought the 8 gal pot, then upgraded to 15. Even if you don't "need" it, it won't hurt. It's real easy to max that pot out on a 5 gal batch. If you figure a gallon of boil off, and .5 gal for trub losses during fermentation, you're starting your boil at 6.5 gal.
Plus, if you want to give BIAB a try it's a real easy way to get into all grain, and the 15 gal is a good volume for that!

With all that being said- you can definitely work with an 8 gallon pot, especially if you get a good deal for it.

I bought a 16 gal for my first kettle, very similar or the same as what Mike posted. No regrets and I don't have to worry about hot break or boil over. I do BIAB so I can full mash with lots of space left (I usually start with 8gal of water and my grain bag will bring that up to 9 or 10)
