Title: House IPA

/5 US Gallons

13# 12oz 2-row
1# 8oz Vienna
Fredericton water + 1.5 tsp gypsum + 3/4 tsp Epsom salt.

Boil hop blend is 2oz each: Simcoe, Mosaic, Chinook, Cascade

Mash at 150, boil for 75 min

Hopping scheme:
Appox 1/3 of total at 75min
Continuously hop with rest until flameout

Pitch onto US-05 yeast cake, use blow-off hose. After primary fermentation, add dry hops: 1oz Chinook, 1oz Mosaic.

Yup... true. I like it in almost all styles of beer too. Just the right amount of maltyness for my tastes and it is not cloying.
