Title: Kolsch Characteristics

I've done about 6 batches with the Wyeast kolsch strain so I thought I'd post my experiences.

First is seems to take 3 weeks+ to ferment out at optimal temp (15.5C)

After fermentation is complete I recommend cold crashing as this strain takes it time clearing at room temp.

When fermented at 15.5C it gives almost 100% lager characteristics.   Almost.  There are some interesting floral things.

After a 3 week cold crash it clears nicely.

This yeast appears to lend it self well to any recipe that requires lager yeast.

I'm still not 100% on the flavour profile of this yeast... just a preference thing though. You still make a damn tasty pseudolager, says the man who drank at least half a growler of it last night :D
