Title: Peach Wheat

I've somehow been tasked with making a peach beer... Not really my thing, at all, but I'm up for the challenge, I guess  :frazzled:

My experience with making flavored beer is quite limited and the few I've made have turned out quite disappointing...  Has anyone ever made a peach beer?  Any recommendations on if I should use real peaches, extract/flavoring? Re-hydrating dried peaches maybe? Should I freeze them first/thaw (to break down the cell walls) or puree them?

I've read the best peach flavor comes from using apricot instead?

I'm hoping to make something that has distinctive peach flavor without being overpowering or too subtle and as little tart as possible. I suspect at least 3lbs in a 5Gal batch of 1.048ish OG light wheat beer would be needed?

I'm leaning towards skinning about 4lbs of apricot-peach mix, doing a puree and adding everything to late secondary for 4-5 days.

BTW, I'll deny ever making a peach wheat beer even if it turns out half decent (for a peach wheat beer).

for my fruit beers i use frozen fruit from the grocery store normally 1 bag does what i want for strawberry and raspberry i find it gives me a nice taste. i crush it in the bag than add it hope this helps a bit. now i am thinking a peach beer

Might be able to find frozen peaches at Costco, worst case, grab a few cans of peaches, drain and freeze.

Could do a Berliner Weisse with a peach syrup? The way a berliner was traditionally consumed from what I've read. I have a feel that isn't what you're being asked to go for though.

I'd be tempted to go with frozen peaches or a puree if you're doing a clean beer.

This one turned out really great - made multiple times and doesnt last long. Probably should promote this to the Tried and True recipe forum...

If I had to make a peach beer for myself (not likely to ever happen) that's the direction I would go.. 

I have a feeling that having any sourness/tartness or much bitterness at all wouldn't work for this crowd, they are not really the craft beer kind.. I'm tempted dump a flat of coors light and peach juice in a keg and call it done, lol

This is what I will make.. might tweak it a little (puree mix of apricot and peach)

Save the $30 - ferment a batch of water, 2KG of sugar and half a pack of turbo yeast - mash up some peaches... ferment, keg...  :wavebeer:
