How the hell do I take out the beer of the keg without making a mess and oxidized everything?

Forgot to mention there are franboise at the bottom too, you can't see it on the pic.

Noble grape used to sell these clips that will hold the siphon in place, you could probably just as easily use duct tape or something. I'd just position the siphon right above the fruit on the bottom of the carboy and then siphon until the fruit on top gets close to the bottom but before it reaches the siphon.

A tip I learned a little while ago was to puree fruit before adding it into a carboy. It gets the same/better effect and is much less of a mess.

Ok great trick, I'll use duck tape to hold it at the right place. But then I feel I will be leaving a lot of precious beer in the fruits/slurry. I would like to extract as much as I can, I could strain it, but imagine all the oxygenation that would occur. Maybe it's better than dumping it.  :o

When ever I add fruit or anything like that I just accept a decent amount of beer loss.

This exactly. Aside from volume loss using fruit you have to accept the loss from that layer as well. Unfortunately it's the cost of using whole fruit.

is it worth purging a bit of co2 in as your siphoning out? Not pressurizing but just drop a line in there and crack the regulator?

When I ferment in a carboy, I just use a racking cane to get it out. Once it gets down towards the bottom, tip the carboy over slowly about 20 degrees to get the last of the bottom. Once you do that, there really isn't that much left in the bottom.

I don't think this would be of much benefit if racking to a bottling bucket. But if kegging there are accessories to buy that allow you to transfer with co2 and avoid oxygen exposure. However this should only ever be done with a PET vessel, never glass.
