Title: Clarity Ferm - Gluten Free Beer
Post by: Two Wheeler on January 20, 2015, 02:18:24 PM
I brought this up at the last meeting during a discussion about gluten free brewing.

I haven't tried any of this, I just remembered it from a recent Basic Brewing Radio podcast.

Clarity Ferm is produced by White Labs, and when used in the proper dose it's supposed to reduce the gluten content in beer to safe levels for gluten intolerants, while not affecting taste. http://www.whitelabs.com/other-products/wln4000-clarity-ferm

Here's a series of articles where Chris Hamilton tests the gluten content and taste of the beer. If you don't care to read it all, he was able to reduce the gluten content to 5ppm, and taste tests revealed little difference between a beer treated with Clarity Ferm and one without.
