mash

thinking on starting a mash at noon tomorrow and sparge at 4 when i get home should i be concerned about anything? or should it be fine? or should i just wait until i get home at 4 and start everything?

No you'll be fine. The only thing I'd keep in mind is you should expect a dryer beer because of the longer mash.

I was actually thinking of mashing over night for a brett saison in the near future. Some traditional Nordic and Eastern European farmhouse Brewers mash for over 24 hours.

I did this a couple Sunday's ago... Mashed in at 10am, ran out to brunch with the in laws and then started the boil at 2. Only lost 10 degrees in my BIAB setup

Nice about what I lost the other Thursday about 10 degrees it was nice doing it like that instead of a very late brew night
