Two Wheeler

Agreed... Belle Saison goes super low... I brewed a 1.060 Saison that actually ended up at 1.065 and it fermented down to 1.003. BeerSmith suggested 1.009. The beer is a little strong

Yea I agree bell saison is a terrific yeast IMHO.

Ready to bottle in a few days, after dry hop.

Wyeast 3711, 2.7 litres starter
OG: 1.064
FG: 1.002

Tastes amazing already!

That's a big beer! Near 8%? I made one with Belle Saison, went from 1.063 to 1.003 and didn't have a ton of the saison character I wanted

How much and with what hops did you use for the dry hop addition in the end?

I have to agree that right now, the yeast isn't showing as much as I had expected, but I'll see after conditioning I suppose.
