So each keg has gas out -> check valve -> Tee -> Spunding keg overflow liquid in

Then still only using a single spunding valve on the overflow keg?

So this would work best if fermenting the same wort in both spunding kegs (or three spunding kegs) - just wondering if each keg is fermenting at different speeds, would be difficult to self carbonate these as you'd have to do both at the same time right?

Do you bother cleaning out the overflow keg between ferments? Do you purge the CO2 from it after the spunding is complete?

Correct setup, definitely works best when fermenting multiple of same wort and yeast.  To self carb if using different yeasts, I'd just pull the keg off of the system and let it build up.

I've used the co2 in the overflow keg to pre-charge other kegs before transfer, and then reuse without bothering to clean it out unless a bunch of crud has come through.
I have noticed that the little check valves tend to get clogged up with krausen and need to be flushed if they've had crud through them or replaced.
