If you visit any ventilation or HVAC shop, they could bend some sheet metal for you.  Then, you could just rivet the extension on.

Good day everyone. It's not too hard to figure out pulley sizes and speeds if you want to get the proper (or close to it) sized pulley for your project.

Ratio:
RPM1     RPM2
  D1                     D2

RPM1 = RPM of Driver - RPM2 = RPM of Driven
D1 = Diameter or tooth count of Driver - D2 = Diameter or tooth count of Driven

Example:
1750 RPM          1000 RPM
 3.5 INCHES           D2

1750 RPM ÷ 1000 RPM × 3.5 INCHES = D2
D2 = 6.125 INCHES

Hope this helps and isn't clear as mud

Hey Stoker,

thanks for that.  I think someone posted a link to a pulley ratio calculator some time ago in a previous post.

For my application, the drill press had a pully diagram with their ratios as the drill press has a step updown pulleys on either end.  I took the 500rpm pulley layout, and went bigger on the grain mill side so should be hitting somewhere around 300-350rpm.  Just about right.
