IIPA and blue (gorgonzola) cheese

Want to know how to make IPA taste like syrup? Eat some blue cheese first  :frazzled:

Not something I'd care to repeat :P

I find IIPA generally pairs very well with:

Asiago, Monteray Jack, very old cheddar, and other savory type cheeses.

Really? I find it pairs well with a second and third glass of IPA... Especially if it's Thomas's black IPA. That stuff was amazing.
Primary: #1, 2, 3, 4 (Air, Air, Air, Air)
Kegs     #1, 2, 3, 4 (C02, C02, C02, C02)

Perhaps it's just this particular variety; I've certainly enjoyed danish blue + IIPA before, just this gorgonzola made my IPA taste like a syrupy mess.

Needs carbed, this was a sample. Should be good to go in a day or two.

Unfortunately my kegging system is in bits atm since the saison yeast got backed up the gas lines. Installing some check valves to make sure that doesn't happen again + sanitising the hell out of everything.

Um, pretty sure you've had those check valves for like, 3 months...since  you last hosted IIRC!
