Easy slow-cooker chicken curry

1 package boneless skinless chicken thighs
1 red pepper cut in small squares
1tbsp peanut butter
1tbsp oil
6-8 small new potatoes (optional) cut into medallions
1-2tbsp crushed peanuts
2tsp curry powder
2tsp minced garlic (the stuff in a jar)
2tsp red chili flakes
3 big onions sliced as thin as possible
1 tin tomato paste
cup or so chicken broth

fry the chicken in oil until it starts to brown then put them in the bottom of the slow cooker
fry the onions in the same oil you used for the chicken
when they start to soften up, add the curry powder,chili flakes and garlic and stir it around
add the tomato paste
add the chicken broth and let it simmer a couple of minutes
pour this over the chicken and don't stir it up (chicken stays on the bottom)

cook all day (leave the stove exhaust fan on high unless you REALLY like everything to smell like curry)
1 hour before you're ready to eat, add the red pepper, potato, and peanut butter ..stir it up now

serve with Basmati rice and Naan bread
