Now that I've ordered a 15ga brew kettle and ready to diy a cooler mashtun I need to start looking at a way to get my beer cooled. What type of set up do you guys recommend?

yea for simplicity, I use a 50 foot immersion chiller. I don't have the pump set up yet like Chris, but plan on doing so in near future, which will be an easy modification to my 50 foot existing chiller once I get off my lazy ass. I typically will stir with a sanitized spoon every minute or so during the chill. Works well.

If you get a pump and recirculate with the immersion chiller you'll be able to chill well within 20 min. Also as a bonus you'll improve your late hop edition flavours and you can visualy see it's clean. More so than with a CFC or plate chiller. But as long as you chill as quickly as possible its all good.
