Quote from: "brew"Yeah this should be an interesting meeting - My raspberry wheat is carbed now - its a bit reddish! Sour also (I put in quite a bit of raspberry's) - but I like raspberry pie without sugar, so for me this turned out great... I'll bring some of the fat squirrel as well - very nutty...

Brew... we need to talk man ;) I've been looking for a good american wheat base recipe for making a cherry-wheat and I can't find any reference to anything but
hefe in Designing Great Brews (good book btw).

Would you mind giving me some idea of what might go into an american wheat style recipe? :D.

Poifect. Thank you :D. I can work with that. Since it's using Pils (I'm assuming that means Pilsner (I'm new)) malt, does it need a protein rest?

I've made a bunch of wheat beers using Weyermann Pilsner, and Weyermann Bohemian Pilsner with single infusion mash and no ill effects.

Hi Kyle, did you do 90 minute boils for these?

HappyHax0r

Sorry to derail the thread guys... can we split it into a new topic?

Hey yeah - I post my beers on our brew blog: http://www.craftbrewing.ca/brewblog/ the raspberry wheat is there... I used only 2 lbs of wheat for this one, based on Jakes summer citrus base recipe. Next time I will add more wheat though, as well as something to add more malt flavor - not sure what that will be yet...

Can't log into the brew blog for some reason with the username and password I have for the forums... is there somewhere I need to register for that as well?

Already done - no SSO on purpose, since brewblogger is flaky as hell, security-wise.

Actually no, an hour is the longest I've done with wheat/pilsner based beers. I have never had a problem.
