Question for the group. Been looking at recipes to try my first Saison, and I am seeing alot of 90 min boils vs just 60.
I am assuming that since most of the base grain is Pilsner, the extra 30 mins is to drive off any off flavors from the Pilsner malt.
Seeing as I am only doing extract with LME....do I have to also do a 90min vs 60min boil? Or is the extra time to get rid of any off flavors with LME already taken care of when they make the LME? I have used Pilsen LME before, and have never came across any off flavors only doing a 60min boil, so thinking I am safe with just a 60min boil. Just thought I would ask the group what they though.

Which is a clone of La Saison du Tractor (which I love), with the exception of the yeast, as they call for the French Saison yeast. I will likely do both, so not going to buy another pack of saison yeast, when I can harvest from the first.
Very surprised by the amount of hops in Tractor, don't recall tasting much Simcoe in the commercial version.
The extra 30 minutes is to get rid of the extra DMS in Pilsner malt, which to my understanding is either not present or pretty insignificant in extract.
