I changed this recipe a bit before I brewed it today. I changed my brewhouse efficiency from 78% to 68% to account for the high gravity I was trying to get. I though I'd bumbled it sufficiently when I only had 1.085 OG instead of 1.091, but it turns out that the .25kg of dextrose that I'll add on Monday will boost it to 1.090, so pretty damned close!
It's a good thing I used a blow-off tube for this. When I checked on it this morning, it was going crazy!
In Brewing Classic Styles, Jamil suggests adding 1lb of corn sugar after a day to help ensure the correct final gravity is reached. I did this. It was not necessary. Instead of finishing at 1.021, it ended up at 1.012. So, 10.2% ABV. That is definitely a Winter Warmer!!
It's carbed and ready for the meeting this week.
I love this technique; I always do this with my saison, belgian or any beer that needs to be dry.
That's nice attenuation you got there!
I was pretty happy with it :) My refractometer lied to me. The calculation worked out to 1.002. I had to dig out my trusty hydrometer to get a correct reading.
personally I always use my hydrometer for final readings
What exactly does the corn sugar addition do??
It helped with the attenuation because it put it in after a day or two.
Sweet ass....something about the name just called out to me. So I spent today making Molasses from Sugar beets I grew last summer with the intent of brewing this bad boy. Let me tell you it takes a hell-u-ahh long time to make molasses. I really have to get out of the country from time to time.
So "Sweet Ass Treacle Factory" was born...Beets go in.....Sweet sweet ass beer comes out. Rinse and repeat. I'll update with tasting notes.

Pulled this out of storage for Christmas. The extra month has done wonders. It's delicious now!
I'm curious if you used actual "treacle"? I bought some black strap molasses from the Bulk Barn with an Old Ale in mind. Figured it would result in a more aggressive flavour profile.
I did, in fact, use Lyle's Treacle. You can buy it at the Scoop 'n' Save, but watch the expiration date. And, I think you're right about the molasses. It'd likely be more bitter.
