Trying to get a cream ale recipe down for the summer.
9lbs Bohemian Pilsner Malt
1.5lbs Toasted Rice
1lb Flaked Corn
1.5oz Saaz 3.5% @ 90.
Mash 4 gallons @ 146, Sparge 5 gallons @ 168.
What yeast are you going to use for this? A lager yeast? What temp? I'm also thinking of doing one of these.
This looks really cool - I'm putting it in my calendar to come over and try it out - say 2 weeks? 8-)...
I';m waiting on a pack of Wyeast california lager yeast. I'm planning on doing something like this with this yeast.
Anyone ever try this strain? 2112 I believe

Jake: would be interested to compare the difference there... planning on doing this with S-23 at proper lager-yeast temperatures too (my crawl space appears to fit the bill).
FWIW the difference between a cream ale and a light american lager is pretty much just the yeast.

I just made a steam beer today with it. I doubt your gonna get a clean taste from this strain. I tried some from the starter and it's got flavor. If you ferment in the 50's make a big starter.
This has to be the lightest colored beer I've ever made... I actually lost about a pint into my star-san container 'cause I couldn't tell when the star-san stopped and the beer started in the low light... We'll see how this goes.
If anyone wants flaked corn/toasted rice, let me know - I bought full bags of each so have more than I'll need in a year.
I have loads of Carafa Special I, Light Munich and Vienna - care to trade one of those for 1/10th of your corn and 1/10th of your rice?
I also have loades of Flaked Wheat and Flaked Rye btw...

If my piss is 1.050 I should start fermenting it and selling it as Beer(tm).
They do that already - its called labatt blue...
If your piss is 1.050 you'd best be calling a physician, and perhaps a coroner. ;D
Second batch of this just pitched with S-23; gravity was two points higher (1.051) but the boil-off was a little more - I just drained the kettle more so the same amount ended up in the carboy.
Propane took just as long, but that's 'cause I didn't ramp it as high as I might due to worries about boil-over. This burner is a versatile little thing.
Dean showed up and gave me a hand with the propane so I didn't end up with a six foot beer-snake ;)
(his IPA/IIPA - bloody good stuff).

If you make this guy again, thrown some late addition saaz in around 10-5 min left. Only a half ounce or so. It really helps the flavor. Also, you have flaked corn eh?
Was trying to brew something for the FIL to be honest, and he's a BMC drinker... if I was making it for me I would have done what you said :)
Ok, made a batch of this today with an OG of 1.120 with the only diff. being I had 1/3 cup of Lemon juice on hand.
What could possibly go wrong?
