Title: Calypso-Cascade Pale Ale
Post by: Richard on January 04, 2012, 01:37:27 AM
Similar to the Saw Mountain Pale Ale (http://nbcba.org/forum/index.php?topic=1004.0) with a few tweaks. Didn't feel like the challenger was a good fit, and wanted a little more caramel & malt character. Pretty sure I undershot my intended mash temp also, after investigating a little (http://nbcba.org/forum/index.php?topic=1077.0).

11lbs 2-row
12oz Crystal 40
8oz Caramunich II
1oz Roast Barley

0.5oz Calypso 12.5% @ 60
0.5oz Calypso 12.5% @ 20
0.5oz Cascade 7.0% @ 20
1.0oz Calypso 12.5% @ 0
1.0oz Cascade 7.0% @ 0

Dry hop 1.0oz Cascade for 1 week.
Dry hop 1.0oz Calypso for 1 week.

S-05

Mash 4 Gallons 60 mins @ 155, Sparge 4.5 gallons @ 166.

Hit numbers and in the fermentor... even the single ounce of RB took the color noticeably darker than the SMPA, but it's still in the ballpark of Pale Ale.
