Hi All!
I am planning to make a 20 gallon batch of this cerveza recipe ... but not sure what I should use for 6-row? Any suggestions? I didn't see anything on the grain order sheet that resembled it.
28.57 lbsAmerican 2-row
5.71 lbsAmerican 6-row Pale
1.43 lbsCorn Flaked (Maize)
1.43 lbsRice Flaked
2 ozFuggle - 3.5 AA% pellets; boiled 90 min
2 ozFuggle - 3.5 AA% pellets; boiled 2 min
White Labs WLP940 Mexican Lager

What character are you looking for with the 6-row?

While unecessary with the 2 row they make today, 6 row would be for the extra diastic power to convert the unmalted corn and rice...

Ahh, yeah. No need fo the 6-row then. I've read that 2-row these days has enough amylase to convert 3 times it's weight. That's an awkward sentence, but you know what I mean :)

For Cerveza you need water that will give you dysentery. I suggest sourcing it from the mighty Saint John :lol:.
