Raspberry blond
« on: September 19, 2017, 05:14:16 PM »
HI everyone,

I did a blonde 1 month ago and I add frozen Raspberry in my secondary.
After my vacation the raspberry add a white film on top meaning wild yeast= sour beer and i will need to wait...

My concern is if I put the beer now in a keg what I should expect from the taste? and Can I drink now..

Thanks

This looks very much like a Brett infection. It may not sour at all, but it could get funky. The alcohol present should mean its safe to drink, I'd certainly taste it. I'd love to get a bottle of this to see what it's like. Brett does work well with raspberries. Taste now, you may like it enough to keg right away.

I nearly forgot to mention. If you decide to bottle this make sure the gravity is stable prior to. Brett will eat almost anything and you don't want bottle bombs on your hands.

Could be an acetobacter infection.

That film will stick to the sides when you empty your fermenter. But the bugs are still there.
You don't need to dump it. It will eventually taste like vinegar but you may have some time before it gets there. It may be fine for several weeks.

This is one of those: a) drink quickly,  b) wait a long time and see if it gets better over time, or c) dump it.
My choice would be to drink it rather quickly. The taste evolves. Make a decision as you go. May have decide b) or c) after that.

Let us know how it tastes, I'm interested to know what type of infection you have.

Hey @Eric , just curious, how was it? Drinkable? Given that it's a fruit type beer, it might have a chance.
