I have been playing around with the water for the last year or so... far from an expert here.
I have a $50 carbon filter kit from Everwood that I run all my brew water through. I also add a camden tablet to ensure all the chlorine/chloramine is knocked out.
Depending on the brew, I will also use brewing salts such as gypsum, CaCl, MgSO4 etc. I use the Bru'n water template to help me out. I have uploaded a template that has the Fredericton water profile added.
When using this, here is my workflow:
1. Go to tab 3, Water Adjustment
2. Choose desired profile in cell A4, such as Yellow Bitter for IPA
3. Set the mash and sparge volume in cell J15 and L15
4. Play around with the additions in cell B17-B24 until the Finished Water profile (cell C12-H12) matches close to what the target is
5. Go to adjustment summary (tab 5), check your work and print it off
If you care about pH:
1. Do all of the above
2. Go to tab 4, add your recipe
3. Check estimated pH in cell G27
4. To adjust, either add acid malt on this tab or:
5. You can add lactic acid on tab 3 row 26
