Tom's insanity fajitas

1. Get plastered at the Celler after a long day of work.

2. Dice up 1 large onion, saute in olive oil with ground garlic and ginger root.

3. Add cut up pork, bell pepers

4. Try to add a small amount of peppercorns, add half a bag instead. Try to add a few hot chili flakes, pour in entire bag.

5. Say "Fuck it", add that old jalapeno from the back of the fridge too.

6. Serve with Tom's homemade insanity salsa. Eat two fajitas.

7. See through time.

8 Spend the next morning destroying the toilet.

My kind of food... but I wouldn't go near it without being stinking drunk first :P

I'm impressed you can pull this off after a big drunk. I'm lucky if I can manage to spread margarine on some crackers.

Cooking drunk is great fun... however I've either cut or burnt (usually burnt) myself practically every time I've done it.

I actually made Vindaloo Curry from scratch the other day and had some Pumphouse Red Ale with it. Matched up pretty good.

Curry paste ----


Ingredients

    * 2 teaspoons coriander seeds
    * 2 teaspoons cumin seeds
    * 2 teaspoons mustard seeds
    * 2 teaspoons ground cloves
    * 1 teaspoon turmeric
    * 2-inch piece ginger, peeled and chopped
    * 1/3 cup white vinegar

In a spice or coffee mill grind spices and ginger until very-finely minced. Turn out into a bowl and stir in vinegar to make a smooth paste.

To make curry oil, mix half of paste with 1 cup vegetable oil.

this recipe is from Emeril's website but im sure add some garam masala to it and should be just about right !!!
