Ingredients:
2 large onion or 4 banana shallots, chopped
4 cloves garlic, finely chopped
2 red chilli deseeded or keep half with seeds if you like it spicy
4 sprigs of thyme, leaves picked and roughly chopped
olive oil, for frying
1000g good quality beef mince
2 tsp ground cumin
4 tsp sweet paprika
2 tsp dried oregano
6 fresh tomatoes or 2 beef tomato, roughly chopped
800g chopped tomatoes
4 tbsp tomato paste
400Ml chicken or beef stock
1 cinnamon stick
2 bay leaf
2 Cans kidney beans, drained and rinsed
salt and pepper
handful of chives, chopped
Will be simmered for roughly 16-18 hours in a slow cooker
