Full Mash to Extract Conversion

Hi!  I am new to the forum and am really hoping that someone might be able to help me out.  My husband LOVES Blue Moon Belgian White but you can only get it in the US.  I have been brewing extract beers for about 6 months now and am pretty novice.  I received the recipe for this beer from a friend but it is for a full mash and I am hopping to get some help in converting it to extract so I can try it out.  The recipe is as follows:


The amounts of grains we used are roughly:
50% 2 row pale malt
40% white wheat malt
10% flaked oats

Hallertauer Mittelfrueh hops were added for a 90 minute boil. Bittering should be around 17.5 IBU. Only one addition.

Add 1.25 tsp of ground coriander added to the kettle 10 minutes before the end of boil. This is for a 5-6 gallon batch.

Add 0.33tsp of ground Valencia orange peel 5 minutes before the end of boil.

The Chico strain would work well in this recipe. You want a neutral taste from the yeast. The flavors that should come through are the orange peel and coriander, not the yeast.



Any help in 'translating' would be awesome!  Like I said, I am VERY novice and am an "add A to B at time C" kind of person.  It would just be really great to make this for my husband as a treat!

3 lbs light DME
2.5 lbs wheat DME
1 oz Hallertaur @ 60 Min
1 oz SWEET orange peel @ 15 min
1 oz Cascade @ 7 min
.75 oz Corriander Seed

Safale US 05 dry yeast
Yield: 5 gal
Boil Size: 2.5 gal
OG: 1.045
FG: 1.012

I think you should be able to omit the flaked Oats as this beer I think is meant to be crisp add the Corriander at about the 3 min mark

You can steep a pound of carafoam instead of the oats for mouthfeel.

Wow, thanks for the speedy replies!  Much appreciated, truely!

Other question though, does DME stand for dried malt extract?  I have only ever used the liquid malt extract.  Anything specific I might want to know about using the dried version?  I typically just pour in the liquid after my initial grain boil when the kettle isn't on heat then stir to fully incorporate it before bringing it back up to a boil.  I assume I do something similar with the dried extract as well.  Sorry :(

Also I assume Carafoam is a grain?  Where do you purchase it?  I acquire all of my brew supplies at Noble Grape but perhaps there are other places in Fredericton?   I like the idea of steeping at least one grain as otherwise it just really feels like cheating!

DME is dry malt extract.  You use it the same way you use LME. 1 lb grain = .75 lb LME = .6 lb DME

Carafoam = Carapils = dextrine. It's for adding body and head retention.  You can't get it at Noble Grape though.  They say they have Carapils, but it's more like Crystal 10L.  It's not far off, but it'll add colour to the beer, and a bit of sweetness.

So just sub in Liquid in place of the DME for a lil more flavor you could put the Zest from one orange and the zest from a lemon in at the 1 min mark just make sure there is no pith

Thanks so much everyone!  (Hi Thomas :))  I will be putting in my noble grape order today!  

Kyle and Brew, I would love to take either of you up on the Carafoam.  I am a northsider but work at UNB so I can pop over anywhere to pick it up.  I would be more then happy to pay for it though!
