Doing this at the MashOccur - one 9G batch split into 2 fermenters. Using Smooth Stout IV from here:

Planning to wash the 1099 for the library when done.

Mashed this yesterday (the 17th) at the MashOccur. Used two 6 gallon buckets. Poured about a gallon back and forth into each one. End up with 4.5G+ in each. 1099 Whitebread taken out of the fridge on Friday morning. Smacked on Saturday morning, moderate swelling of the pack on Saturday night. No starter.
OG: 1.056 (13.8 Brix)
Pitch S-04 in the first, 1099 Whitebread in the second.
- 12 hours: Krausen formed on the S-04, nothing yet with the 1099.
- 24 hours: Krausen 5" tall - looking like its going to go out through the blow off tube. No action yet on the 1099.
- 36 hours: S-04 - good thing I used a blow off tube. No additional contributions to my ceiling art yet. 1099 - 4" Krausen.

After 7 Days:
The 04 seems more finished than the 1099. Temps were at 68F. Smells awesome.
1099 - 1.016
S-04 - 1.011
Transferred to secondary.

After 18 Days:
1099 at 1.013
S-04 at 1.010.
Kegged. Still smells great.

Taste comparison?

Honestly I'd say the comparison is similar to that of the 1728 to S04 with the Dunedin Dumber, but that's about the best I can do warm and without carb... They both smell / taste really nice, give em a few days with some carbing and I'll try again. I'll also bring them to the next meeting as well...

To me, the 1728 was much more balanced in the Dunedin Dumber. The S-04 had the esters run a little out of control (big surprise) in comparison.

I see I didn't finish this one off with a description of the result. From my notes in Beersmith, the 1099 while seeming somewhat cleaner, had a lighter finish and a nice flavor I can only describe as "whitbready" - I know its a cop out but as always I'm not sure how to describe this. Richard did try it and might have a better description. The 04 version was as it usually is, darker and fuzzier is the only way I can describe it. I prefer the 04 to be honest...
