If 30 psi for two days is what works for everyone else? Than that's what I'll do. I'll try to post pics when I get a chance.

Ah the technical art of force carbing...

Fill the keg, chill the keg to 0C, hit with 30 psi and shake the kegs for 30 seconds. Hit with 30 psi again and repeat roughly 12 times. 
Release most of the pressure slowly, hookup to tap and gas...ready to go.
Takes about 15 mins total.

I guess the 3rd option is to hook it up at serving pressure and leave it for a couple of weeks.

Just be careful if you don't have check valves on your manifold/regs.  Last thing you want is beer moving between kegs or into your reg.

So you did end up running a CO2 line through the side of the fridge.  Good call.  I'm pretty sure most fridges don't have cooing lines in the side anyway.  Leaves room for more beer too!
