Lite Autumn Ale

This is geared as a crowd pleaser, very mild, but with mulling spices. Target: 34 IBU, 4.7%abv.

20 lbs    2-row
0.75 lbs Dark Munich
0.5 lbs Weyermann Caramunich® TYPE II

1.25 oz Galena (Pellets, 10 %AA) boiled 60 min
1.5 oz Fuggle (Pellets, 5.6 %AA) boiled 15 min
1.25 oz Fuggle (Pellets, 5.8 %AA) boiled 1 min.
0.25oz Saaz (pellets, 5.8%) @ 1min.

Yeast: Fermentis US-05 x 2

10 tea-bags of mulling spices steeped for 15 mins, then steeped again for 10 mins in fresh hot water, add liquid at end of boil

Yield: 11 US Gallons into fermenters

EDIT: O.G. = 1044, taste/aroma of wort was good, will have to see if too much mulling spice, but smells very good. Mashed at 152F. Also changed final hop addition above, figured fuggles was a better choice than an all-saaz finish (earthy rather than floral).

A little goes a long way with those spices; might want to scale them back a bit. Just my $0.02.

This was planned as a sessionable take on the Rickard's Cardigan (which is good for what it is, but too spicy to enjoy more than one or two). It has definitely done that, and I will make this again. The hops are just there to balance, fuggles gives a very subtle hint of earth that goes well with the spices.

Glad to hear the spices worked out. I will likely take a similar approach when I use any in future brews.
