I think without amarillo you're dead in the water on this one... You might end up with something good, but not comparable. Suspect crystal 40 is an appropriate sub, but again you're getting further off the original with every sub.
My most recent bottling "crystal IPA" was an attempt to see what massive quantities of low-L crystal malt would do to an IPA. I only bottled it yesterday, so it's a little early to tell if I got even close to the mark. My first impression is that the candy-like quality of the loose cannon comes from a hefty quantity of low-L crystal and a high mash temp. I suspect the 1lb in this recipe is lacking, and that at a minimum they were at more like 2lbs. Tasting the non-carbed beer suggests that at least the flavour is closer than other homebrew IPA benchmarks; not sure about the body yet. Am a little worried the body will be too thick and cloying, so some tradeoff between mash temp and crystal % is likely to be necessary.
I'll have some of the stuff chilled for the meeting - it's an interesting academic brew if nothing else
