Imperial IPA : Pliny the Elder clone

5-5.5 gallons into fermenter, based on 75% efficiency.

6.25 kg Canadian 2-row
272 g Carapils
272 g Caramunich II

Mash at 151 F for 60 minutes.

90 minute boil, 7.75 gallons pre-boil (target at end of boil 6.25 gallons, due to large amount of hop residue).

94 g Columbus pellet hops (14.5% AA) (90 min)
20 g Columbus hops (45 min)
28 g Simcoe pellet hops (12.2% AA) (30 min)
1/2 tsp yeast nutrient (15 min)
1/2 tab Irish Moss (5 min)
70 g Simcoe hops (0 min)
28 g Centennial hops (8.8% AA) (0 min)

Wyeast 1056 American Ale
Ferment at 68 F.
When fermentation begins to slow, add 363 g table sugar (boiled and cooled in 1-2 cups water).

Dry hop schedule:
28 g each Columbus, Simcoe, Centennial (12-14 days)
7 g each Columbus, Simcoe, Centennial (last 5 days of dry hop)

OG 1.071, FG 1.011, IBU 183 (calculated; actual, probably 90-100), SRM 7, ABV 8%

Carbonate to 2.5 vol CO2.

It's been over a year and a half since I've had Pliny the Elder, so unfortunately I won't be able to do a side-by-side comparison, unless I luckily find someone who happens to be traveling to the Western states.
