Honey Badger Got Your Tongue (IIPA)

Yet another IIPA - this should saturate IBUs, as usual, with the rest contributing resinous flavours.

Note water is Fredericton city water, modified using 12g/3tsp of gypsum (yeah I know, that's a lot). Minerals added to mash/sparge water, since those with higher mineral contents have had success with harder water from mash through to boil.

15lbs 2-row
8oz Caramunich II.
8oz Crystal 110.
8oz Carafoam.

4oz Magnum 10% @ 120
2oz Centennial 9.6% @ 90
2oz Calypso 12% @ 60
2oz Centennial @ 20
2oz Cascade @ 20
2oz Palisade @ Flameout.

Mash 5 gallons @ 156, Sparge 5 gallons @ 168.

Yep, that amount of calcium and sulfate will enhance bitterness for sure.
I suspect that is exactly what you're looking for.

Awww yeah... that flavor I'd been looking for is there in abundance. Finally!

I'm going to mess around a little with Burton salts too, as I think blending those with straight gypsum might round it off even further, but for now - I'm bloody happy that I finally nailed that resinous hop IIPA flavour :)
