Amarillo Sunday IPA

Since I've been very busy with work lately I've hardly had time to brew. Managed to get a brew in today and just winged an IPA off the top of my head, based on one of my favourite hop trios: Centennial, Cascade, Amarillo. Real simple recipe. Next time I'd drop the second sparge and add 1 gallon to the first sparge - the second was an on-the-fly correction due to a low boil volume. This was a bit of a team effort between a new member (Hall) and I.

9lbs 2-row
1lb Sucrose
0.5lbs Carafoam
0.5lbs Crystal 60L

Fredericton water w/2Tbsp Gypsum.

2oz Centennial 9.9% @ 60
1oz Cascade 7% @ 20
2.5oz Amarillo 9% @ 20
1oz Cascade 7% @ 0
1.5oz Amarillo 9% @ 0

Mash 3.5 gallons @ 149, Sparge 3.5 gallons @ 168, Sparge 1.5 gallons @ 150.

OG 1.055.

Bulk Aging: Silence of the Lambics (Pitched 13/05/2012).

Nice dry IPA - good hop presence across the board. The bittering is a little harsh, but it's young right now. Dry hopped with 1/1 cascade/amarillo for 7 days.
