Done w/o spunding valve. 6Gal batch.

0.70 oz               Chinook [10.50 %] - Boil 60.0 min
0.70 oz               Magnum [12.90 %] - Boil 60.0 min
1.33 oz               Calypso [12.30 %] - Boil 10.0 min
1.33 oz               Centennial [10.50 %] - Boil 10.0 min

Swapped out Amarillo for Calypso 'cause I don't have any Amarillo left apparently. Calypso lives up to its name... smells like tropical fruits, nothing like any other hop I've come across. Higher temp mash seems to work well for that candy-like quality - the wort smells a lot like the stuff JQ made. Think I've got a winner here.

Edit: boil took waaaay more out of this than I had expected... think I've got 5 gallons in the fermenter.
