So though I've made a number of stouts, finally decided to try an imperial now that I built a shiny new 60L mash tun. It is mega HOT and boozy right now with a 9.4 ABV, but flavor is really fantastic, and hope the alcohol mellows a bit with age. Probably leave it for 4 to 6 weeks to age, and try a thief of it after 4 to see where its at before I decide when to keg it. I was really aiming to stay in style, and ended right on the cusp of the FG with a 1.019 for 3 straight days. (BJCP says 1.018 for style)
